White Chicken Chili


1 large onion chopped
1 yellow pepper chopped
1.5 pounds boneless skinless chicken breast
2 cans white beans not drainded (one of them put through the food processor)
2 cans chicken broth
2 small cans of diced green chilies
1/2 cup frozen corn
1 envelope of mc cormick white chicken chili seasoning

cumin
corriander
chili powder
cilantro

Put chicken and chicken broth in a pot and bring to a boil. Lower heat to a nice simmer, cover and cook about 45 minutes. Turn off the pot and let it cool. Once chicken is cool, remove and shred it. Add the chicken, the broth it was cooked in and everything else through the mc cormick seasoning into to the crock pot and cook for a few hours! Add a little cumin, corriander, chili powder and cilantro here and there while cooking and then when your ready to eat enjoy a bowl topped with some shredded cheddar and cliantro! We had ours tonight with some home made corn muffins compliments AJ! I was really VERY good! I may even enjoy it a little better then ground beef chili and it's healthier - BONUS!

BW3's

Today we had Sunday Funday at BW3's - Alex and I haven't been since college and it was every bit as good as we remembered! The kids were even pretty well behaved! Oh, and my daughter is now one of those kids who sits and pretends like she doesn't know us and watches a show on my phone! Oh, almost forgot - to make a great day better, it flurried all day long!

When we got home that night it was about 5 degrees (a record low since about 1919 for GA) and I braved the temps to take out Marley-

Yes, I am still cooking!

Most recently Short Ribs & NJ Sloppy Joes -

Short Ribs (cheating with William Sonoma)-

Short Ribs
Willam Sonoma short rib braise
flour
salt
pepper
olive oil

S&P them, dredge them in flour, brown them up in oil and throw them in the crock pot with the WS braise, and wait all day - the smell is amazing! Serve them up over egg noodles with some sauteed spinach and your will have a little party in your mouth!!!! YUMM!

Turkey
Ham
Swiss
Cole slaw
Russian dressing

NOTHING BETTER - AND YES THIS IS THE ONLY SLOPPY JOE I WILL EAT!

John's Creek Founders Day

We had a really great time at our local "independence day" parade - it was freezing out but super fun! The town we live in has only been separate from Alpharetta for 4 years so it is still quite new but its super great and has all the greatest stores, so I say celebrate away!!! AJ loved meeting all the different characters and running with all the kids collecting pockets full of candy, necklaces, whistles and other fun treats, Dylan loved seeing the flashing lights on the police cars and fire trucks and went crazy for all the horses, and Alex and I were in awe of the PGA Championship Trophy (tournament is being played about 5 minutes from our house this August)!!! We are loving our town so far and are so glad we made it out to the parade!

The Prettiest Little Ballerina!

So for about the past 6 months AJ has been begging to take ballet lessons - how perfect is it that a company comes right to her after school, changes her into her outfit and she gets to do it with all the girls in her class! She has been loving it! D and I show up about 10 minutes early to get her (which is awesome since I get to get her an hour later then normal every Tuesday!!) to watch the cutest most precious thing I have ever seen! She does such a great job with her posse and her turns - I am in awe of the best little ballerina ever!
