Lemon Chicken!


  • 1 1/2 lbs boneless skinless chicken breast halves
  • 4 tablespoons all-purpose flour
  • Salt and pepper
  • 3 cloves sliced garlic
  • 4 tablespoons butter
  • 1 cup chicken broth
  • Juice of 1 large lemon
  • 2 tablespoons minced fresh parsley
  • Combine flour, salt and pepper and dredge the chicken in it. Set remaining flour mixture aside. In a pan brown chicken in 2 tbs of butter and transfer to a baking dish. In the same pan saute garlic in remaining butter. Add reserved flour mixture and stir to form a thick paste. Gradually add broth and lemon juice. Bring to boil; cook and stir until thickened and bubbly. Pour over the chicken and sprinkle with parsley. Cover and bake at 350° for 20-25 minutes or until done. SO SO YUMMY - one of Alex's favorites!
