I got the idea for this soup from my sister in law and it is super good and a definite keeper - thanks Maria!!!
3 cans of chicken broth
2 cans of water
4 bone in, skin on chicken breasts
1/2 bag baby carrots
1 celery heart cut up into chunks (including leafy greens)
1 small onion cut up
fresh parsley
salt & pepper to taste
2 cups Bisquick mixed with 2/3 cup milk
Add chicken breasts, broth, water, parsley, salt & pepper to pot and bring to a boil. Cook for about 40 minutes or until chicken is done. Remove the chicken from the pot, let it cool then remove the meat, shred it and add it back to the pot. Add the carrots & celery and cook till veges are softened. Mix the Bisquick and milk and then drop by the spoonful into the pot. Cover and cook another 30 minutes (or till dumplings are done) and serve! SO YUMMY!
