Chickpea Salad w/ Cilantro Lime dressing
Made this chick pea salad with a cilantro lime dressing tonight - kind of an adaption of a recipe I saw on Pintrest! Turned out awesome!
Salad-
1/2 cucumber cut up
1/2 small red onion sliced
10 cherry tomatoes sliced in half
10 black olives sliced
1/2 can of chick peas
1/2 cup of corn
1/4 small green pepper diced up
Dressing-
4 TBS EVOO
2 TBS white vinegar
1/2 lime juiced 1 TBS of honey
1/4 cup fresh cilantro
small clove of garlic
S&P
Put salad ingredients in bowl. In your food processor combined all the dressing ingredients, give it a whirl and dump over salad. Put in fridge for a half hour or so and then ENJOY! SO good and looks pretty too!

Valentine's Day
We had a nice and quiet Valentine's Day this year. They kids were happy to wake up to chocolate treats and light up roses and then were super excited to head off to school to give out their Valentine's to their friends. AJ was very proud she wrote all her friends names out and signed them all personally, Dylan was just happy his had lollipops attached to them for all his friends! Dylan choose Spider Man and AJ Scooby Doo! They were also excited to give their teachers a small box of chocolates!
Alex and I cooked a nice dinner together once the kids were in bed - mushroom risotto, veal saltimbocca and creamed spinach - it was really delicious and cooking together is always fun! Of course there was champagne, wine and a movie to go along with dinner and plenty of snuggles, x's & o's!

Horse Show
This weekend we took AJ to watch her first horse show. She got to see a few girls that take lessons with her teacher ride in some beginner walk, trot, canter and small jump competitions. AJ was excited to watch and she hopes one day she will get to ride in one and will win a ribbon!
Here she is watching-
And here is her teachers Ms. Suzie and Mr. Tracy getting some students ready-

Practice Makes Perfect!
Proud of my AJ! After practicing all week, today she came home and told me she gets to eat lunch with her teacher one day this week for mastering all her sight words early this quarter AND she won the Oscar for writing and reading her story about moths! AJ get's very frustrated when she doesn't master things VERY quickly. When the sheet first came home on Monday there were a few she didn't know or wasn't doing quick enough. Alex and I kept reassuring her all week that if she keeps practicing she will get it and she did it!!!
AJ is emerging into such a smart and confident little person! She is doing amazing in school - she loves to learn and I love that I get to ride in the passenger seat and enjoy the view!

1st Daddy Daughter Dance!
SO SWEET - my AJ had her very first date to her very first dance with the best guy I know. Her lucky date was with the one that will love her no matter what and will always be there to pick her up even higher when she shines and will be there to catch her before as she stumbles and before she falls - her daddy! She was so excited getting ready and wanted to make sure daddy didn't catch a glimpse or peek until she was all ready in her dress with her hair done and curled, her nails painted and her makeup on! The dance was at school where AJ got her corsage and the two of them enjoyed dancing, cookies and lemon-aid (which I made earlier in the day as part of my PTA obligations!). So happy they had such a good time and I feel so very fortunate my daughter has the most special, loving, loyal and dedicated daddy!
Here is the professional picture they took at the dance that night - SO PRECIOUS!
