Easter Sunday Spinach Quiche!
1/2 cup whipped creme cheese (heated in the micro for 30 secs)
3/4 cup light creme
3/4 cup reduced fat/low sodium swiss cheese
3/4 cup reduced fat cheddar cheese
1/2 onion diced
1 10 oz package frozen spinach, defrosted and drained
1 TBS butter
Preheat oven to 350 degrees. Heat butter in frying pan and cook onion till tender. Add the spinach and cook till there is no more water present. In a large mixing bowl whisk together the creme cheese and light creme, once mixed together whisk in the eggs. In the bottom of a pie shell place about half of the cheddar and swiss cheese, top with the spinach and onion mixture and then with the rest of the cheese. Dump egg mixture over the top and place quiche on a baking pan. Bake in the oven for 45 minutes or until done.
