Julia's 1st Birthday
We all had such a great time celebrating my niece Julia's 1st Birthday this past week. Tuesday, the 24th was her actual birthday and we all invited over for some pizza, salad, coke (which was super awesome since Alex & I hadn't had it in FOREVER) & ice cream cake! Today was her big bash and it was tons of fun! Julia looked super adorable in her cup cake top and flower petal tutu and there was a magician, face painter, balloon guy and a candy bar! The brunch food and all the deserts were delishious and we had so much fun! Happy Birthday to the cutest little 1 year old - thanks for all the smiles this past year!

News Paper, Coffee & Corn Muffins!
AJ has the cutest little routine when we go to my mother's house - the two of them walk outside down the driveway to get the paper, when they get back in they share a morning cup of coffee and a Thomas Corn Muffin with butter (and some grape jelly on Mimi's). AJ's coffee is of course very milked down but she loves drinking it out of a real coffee mug just like Mimi does. Recently I have to give Dylan a pice of corn muffin too so he doesn't feel left out - and just like the other two, he loves it!

Last Day of Camp
Sad to say that today was the last day of camp for the summer! I will be glad to have my AJ to myself for a few weeks till school starts up again (which she LOVES too) but I know she will miss it! She loved camp and had so much fun doing all the fun activities they had to offer. She tie-dyed, she cooked, she made bracelets and necklaces, she did all kinds of art projects, she swam and played in the sprinklers and on the jungle gyms, she had pizza lunches and a pancake breakfast with her friends! Thank goodness we have lots of stuff coming up to keep us busy till the start of school!

Pig Tails & Sippy Cups
2 important milestones have been reached in the Matrale house hold - AJ's hair is long enough for adorable pig tails and Dylan can use a sippy cup all by himself - not the normal kind that babies first start off with (he still has no clue what to do with those), but the big-kid straw kind! Hey - whatever works!

Antipasto & Calzones
Calzones-



1 tub of ricotta
1 egg beaten
few leaves of fresh basil chopped
few sprigs of fresh parsley chopped
ground pepper
1 cup of shredded mozzarella
some cut up pepperoni
1 store bough ball of pizza dough cut in half
whole wheat flour for rolling our dough
olive oil for oiling pan and brushing
Preheat oven to 375 degrees. Combine ricotta cheese, egg, basil, parsley & pepper in a bowl and mix.
Roll out each half of pizza dough over some flour to about a 1/4 inch thickness.
Lay rolled dough on oiled pan. Top half of dough with the ricotta mixture, 1/2 cup of mozzarella and some pepperoni.
Fold over the other half of dough over the top and seal the dough together. Brush the tops with some olive oil, poke with a few holes on top and cook for about 15-20 minutes.
