White Chicken Chili


1 large onion chopped
1 yellow pepper chopped
1.5 pounds boneless skinless chicken breast
2 cans white beans not drainded (one of them put through the food processor)
2 cans chicken broth
2 small cans of diced green chilies
1/2 cup frozen corn
1 envelope of mc cormick white chicken chili seasoning

cumin
corriander
chili powder
cilantro

Put chicken and chicken broth in a pot and bring to a boil. Lower heat to a nice simmer, cover and cook about 45 minutes. Turn off the pot and let it cool. Once chicken is cool, remove and shred it. Add the chicken, the broth it was cooked in and everything else through the mc cormick seasoning into to the crock pot and cook for a few hours! Add a little cumin, corriander, chili powder and cilantro here and there while cooking and then when your ready to eat enjoy a bowl topped with some shredded cheddar and cliantro! We had ours tonight with some home made corn muffins compliments AJ! I was really VERY good! I may even enjoy it a little better then ground beef chili and it's healthier - BONUS!
