Really Easy & REALLY Good Chicken Parm

4 boneless skinless breasts pounded very thin
whole wheat flour
Italian bread crumbs
olive oil
1 beat up egg
Tomato gravy (saute up some diced onion and garlic in olive oil, add a large can of crushed tomatoes, some parsley, basil & oregano, s&p - cook together for about 25 minutes)
4 slices of mozzarella
Parmesan cheese

Pound out your chicken, dust with flour, dip in egg and then coat with bread crumbs. Heat up some olive oil in a pan and fry up the chicken for a few minutes on each side till nicely browned. Remove and place on paper towels to remove some of the excess oil. Put some tomato gravy down in the bottom of a baking dish, top with the chicken, some more gravy, some grated Parmesan and top with the mozzarella. Bake a oven preheated to 350 degrees for about 25 minutes! Easy as that and SOOOO good!

Sorry the finished product looks a tad overdone but last night is the night our town tornado sirens were sounding off and I was busy hiding with my husband and 2 kids in the closet till the coast was clear! No one told me I moved to tornado country when I gave the ok to move us down to GA!!! Needless to say we are all ok and no tornado ever touched down thank goodness - let's just hope this isn't something that happens here too frequently!
