Cold Quinoa Salad

Made this to bring to the pool for lunch and it was SO good and SO refreshing!  I used some Whole Foods frozen white quiona (microwaved it for about 20 secs to get it to defrost quick) and added corn, tomatoes, red onion, green peppers, fresh parsley and a splash of red wine vinegar and a tiny dollop of EVOO!
