BBQ Thai Peanut Kabobs


Cut up a pork tenderloin, a zucchini and a onion into kabob sized pieces.

In a medium bowl mix 1/4 cup peanut butter, 1/4 cup green onions, 1/4 cup soy sauce, 3 TBS lemon juice, 1 1/2 TBS brown sugar, 2 grated garlic cloves and a 1/2 tsp coriander. Set about 1/4 marinate aside in a seperate container. Add pork to remainder of marinate and stir to coat. Cover, and put in the refrigerator at least 1 hour.

Preheat grill for high heat. Thread marinated pork, zucchini and sweet onion alternately onto skewers. Transfer remaining marinade to a small saucepan, bring to a boil, and cook for several minutes. Place kabobs on the grill and cook, turn skewers while grilling to cook evenly. During the last few minutes of cooking brush on remaining marinade.

Cook Kame noodles till tender then fry the noodles in a little sesame oil before adding the remainder of the peanut sauce and some extra soy sauce.

Chinese Chicken Lettuce Wraps

We had a really yummy dinner last night. This recipe is defiantly a keeper and will be made again and again!



2 cups fresh shitake mushrooms (stems removed and chopped)
1 1/2 lbs chicken breasts cut into bite sized pieces
2 tbsp vegetable oil
1 tbsp sesame oil
1 dash of course salt and course black pepper
3 garlic cloves chopped
1/2 inch piece of ginger (finely chopped)
zest of one orange
1 can of water chestnuts chopped (diced)
3 scallions chopped
6 tbsp hoisin sauce
1 head of Boston bibb lettuce (separate leaves)

Preheat a large skillet to high and add oil to the pan. Add the chicken to the pan and sear the meat by stir frying for about 5 minutes then add the mushrooms, salt and pepper. Next add the garlic and the ginger and cook for a minute. Grate the orange zest into the pan and add the water chestnuts and scallions and cook for about 2 minutes. Add the hoisin sauce and toss to coat the mixture evenly. Pile the chicken mixture into the Boston bibb lettuce leaves, fold and eat.

Frank's Hot Sauce

I love Frank's Hot Sauce on many things but today I discovered one thing that I defiantly do not like it on and that is my daughter!!! That's right - I had her in the kitchen with me playing while I was prepping dinner - I guess one of the times I opened the fridge door she grabbed it off the bottom shelf - well when I finally realized she had the top off and was pouring it all over herself! Needless to say she had a early bath tonight and luckily I had just changed her into her hangout cloths and she didn't ruin anything good!

*Lesson to self - take things off the bottom shelf that she can get into easily!

Narley Nachos!


Alex had a special request for nachos for lunch - so off to the store we went! We got back and I cooked them up and oh so yummy they were!!! We even got to catch a replay of last years wild card game between the Redskins and Seahawks on NFL Network - it was almost like a real Football Sunday!!! Now we really can't wait for September!!!!
