Pizzagaine

This is something my Italian mother in law always made around Easter and everyone always loves it. Since we will be in Disney till the day before this year I am making it ahead and then freezing for when we get back! Can't wait to dig into this and my mother's left over meatballs that she made for us on her most recent trip her for Easter dinner - it's going to be SO good and what's even better - hassle free!!

Pizza dough (enough to roll out into 8x8 in cake pan and then top with)
3 eggs
1 cup ricotta
1/4 lb ham diced
1/4 lb salami diced
1/4 lb pepperoni diced
1/4 cup parmesan
1/4 lb provolone diced
8 0z mozzarella cubed

Preheat oven to 325 degrees. Spread pizza dough out to fit into 8 inch cake pan. Whisk 3 eggs and add to the ricotta reserving a tiny bit of the egg to make a wash from. Add in grated parmasan cheese and mix well. Add all the diced cheeses and meats and mix. Dump into cake pan and top with another layer of pizza dough pinching to seal around the edges the best you can. Cut a hole in the top so steam can vent. Place in preheated oven and cook 60-75 minutes. If top starts browning too quick cover the edges with foil.
