Grilled Shrimp Salad

uncooked shrimp
lemon butter
old bay seasoning
1/3 cup orange juice
2 TBS balsamic vinegar
1 TBS honey
2 cloves grated garlic
little olive oil
baby spinach
clementine orange
red onion

Combine oj, vinegar, honey, garlic and olive oil in a container and whisk to mix well. Seperate in half and use 1/2 to marinate shrimp in. Make salad in a bowl with spinach, orange slices, tomato and red onion. Put marinated shrimp on skewers, sprinkle with lots of old bay and set grill to medium/high heat. Grill about 3 minutes per side or until pink and brush with some melted lemon butter! Top salad with rest of marinade/dressing and then the hot cooked shrimp - enjoy! Simple, healthy and oh so good!
