Corned Beef & Cabbage!

1 package corned beef
2 large red skinned potatoes cut up in big chunks
1 head of cabbage cut into wedges
1 onion cut up
3 celery stalks cut up
1/2 package baby carrots
1 bottle of beer
spicy mustard
sea salt

Place carrots, potatoes, onion and celery on the bottom of your crockpot. Rub corned beef with mustard and place on top of the vegetables. Pour beer in and then add enough water to just about cover the meat. Turn crock pot on the ten hour setting and place the lid on. After about 8 hours add the cabbage to the top and baste with some liquid. Cook two more hours and baste the cabbage occasionally.

Alex liked it SO much he went back for seconds and was actually happy to have left overs to take to work with him the next day (and he is not the biggest left over fan at all)!
